Giada De Laurentiis Makes A Mean "Dirty Risotto!"

Try Giada De Laurentiis's "Dirty Risotto Recipe." You'll Love IT!

Giada De Laurentiis's "Dirty Risotto" is one of my all time favorite risotto dishes to make! Check out her recipe that makes 4-6 servings:

5 C reduced-sodium chicken broth
2 T unsalted butter
2 oz pancetta, chopped
6 oz spicy Italian sausage, casings removed
...3/4 C finely chopped onion
1 C chopped red bell pepper
4 oz button mushrooms, trimmed & coarsley chopped
1 1/2 C arborio rice (always use a short grain rice, vs. regular long grain)
3/4 C dry white wine
1/2 C freshly grated parmesan cheese
1/2 t salt
1/4 t freshly ground pepper
1 T chopped fresh flat-leaf parsley
Bring the broth to a simmer in a medium saucepan. Cover the broth & keep hot over low heat. In a large heavy saucepan, melt the butter over medium heat. Add the pancetta & sausage & saute until golden brown, about 5 mins. Add the onion, bell pepper, & mushrooms, & saute until tender, about 8 mins. scraping up the browned bits on the bottom of the pan. Add the rice & stir to coat with the oil. Add the wine & simmer until the wine has almost completely evaporated, about 1 min. Add 1/2 cup of the simmering broth & stir until it is almost completely absorbed, about 2 mins. Continue cooking the rice, adding the broth 1/2 cup at a time, stirring constantly & allowing each addition of broth to absorb before adding the next, until the rice is tender but still firm to the bite & the mixture is creamy, about 25 mins. total. Remove from the heat. Stir in the parmesan cheese, salt & pepper. Transfer the risotto to a serving bowl. Sprinkle with the parsley & serve immediately. I added about a bunch of rough chopped & steamed asparagus & 1-2 chopped (cooked) garlic cloves to add more depth & color to this dish & it was scrumptious! Enjoy!!!
